Alas, cooked onion

I got J to taste a bit of the broccoli-parmesan risotto, in the hope that I might not have to throw it out, but the cooked bits of onion were too much for him. Our mothers learned to cook in very different traditions! Also I suppose my mom’s cooking style was much more cosmopolitan than the norm.

Both my brother and I loathed onion when we were children, but I use a lot of onions in my cooking now, both in traditional British stews and casseroles or Indian or Chinese dishes.

My mom did a lot of ethnic cooking - Mexican, Italian, Cantonese, and "Korean." The latter was dishes she learned from her Korean college roommate, adapted to 1950s U.S. supermarkets, so our "Korean noodles" dish was simply angel hair pasta with round steak, onion, and soy sauce. But they invariably had onion in them unless we asked her to leave it out.

Yeah, I made something like 10 servings of the risotto, ha! Well, I set one serving aside in case I feel like gambling with headache again.
