I can't reasonably buy a copy of Berlyne's Aesthetics and Psychobiology (that is, it's a minimum of $187 on Amazon), but it's so old that it's in the public domain, and I've been saving the most useful passages to a text file for future reference. Some of the passages are longer than I want to type, so last week I scanned them at my office. I can then highlight and copy passages from the resulting pdf, with varying results. Sometimes it turns out like this:

When I went back to the first 100 pages, naturally there were some longer bits there, too, but I don't want to drive to my office just to scan yet more pages I'd then have to spend hours cleaning up. So yesterday I scanned it on my home printer, but my home printer just makes images, not OCR-ready files. Okay, what free resources are there for converting images full of text into usable text?
I started with this image:

I tried
https://products.aspose.app/ocr/ocr-to-pdf/jpg. It made a supposedly "searchable pdf," but it was not searchable, let alone copy-and-paste-able.
I tried some place I can't find anymore, which reduced the entire thing to about five nonsense characters.
