Oh, interesting - I haven't heard of "wild" yeast. I'll have to look into that.
This bread is my favorite because it's just like my homemade bread except more regularly shaped, and sliced, and I don't have to bake it myself. D is content to eat this bread too, but J only likes porous, gummy, chemical-tasting bread. And that would be fine since he lives in his own house and all, except that he also prefers to leave his bread on the counter rather than refrigerating it and yet seldom eats more than a few slices before it goes bad. Oh well - not my problem, I guess.
